Here’s to a New Year and more menu planning! I was diligent for a couple of months at the beginning of 2013 and I’m hoping for a habit that sticks in 2014. Fingers and toes crossed people!
Sunday Jan 5
Nothing but leftover meatballs in barbecue sauce stuck in buns with a piece of cheese for good measure. I poured some melted butter over them and baked at 350F for 20 min until they were toasty and delicious. Plenty of fruit on the side. For balance.
Monday Jan 6
Leftover crockpot soup from Friday.
A make it up as you go along creation: two bags of cooked navy beans (equivalent to two cans), 8c chicken stock, 9 links worth of honey garlic sausage cooked into crumbles, half a butternut squash peeled and cubed, and a few cups of frozen chopped kale thrown in at the very end. It could only have been better had I remembered to throw in a Parmesan cheese rind. Oh well, next time. It was too delicious not to repeat.
Tuesday Jan 7
Homemade Chicken and Rice Soup
I had a crockpot full of chicken stock waiting to be strained and used or frozen so I opted for using it. The fact that the windchill was -40C may or may not have strongly influenced my decision.
Wednesday Jan 8
Leftover soup from yesterday and the one bowl of soup from earlier in the week. Soup out!
Thursday Jan 9
Crockpot Tomato Sauce and pasta
Friday Jan 10
Leftover day! Shopping with the girls!
Leftovers for the fam and dinner out and shopping for me.
Saturday Jan 11
Saturday night is movie night with the kids. I think we started this last winter and it’s a night the whole family looks forward to. I get a glass of wine and hubs gets something on the rocks and the kids get chips. Everybody’s happy.
Somehow, and maybe because it’s a comfort food to go with a comfort activity, pizza night got tied to movie night. I might make the dough from scratch or we might use naan from Costco. Either way it’s carbolicious and calorific!
